Tomato Pie

Golda Berger, Giddings, Texas

  • 2 fresh tomatoes, chunked, lightly salted, and drained
  • 1 large onion, sliced
  • 1 lb. bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 pie crust

Bake pie crust and cool. Put drained tomatoes on bottom of crust. Top with bacon and onions. Mix mayonnaise and cheese and cover the pie with it. Bake at 350° F. for 15-20 minutes until cheese melts. Surprisingly good.


Hot Chicken Brunch Salad

Zee Anne Reishus, Wood Lake, Minnesota

  • 4 chicken breasts
  • 1 cup water
  • 1 bay leaf
  • 5 celery leaves
  • 2 cups chopped celery
  • 1 cup sliced water chestnuts
  • 1/2 cup sliced mushrooms
  • 1/2 cup slivered almonds
  • 2 Tblsp. minced onion
  • 1/2 can cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 Tblsp. lemon juice
  • Salt and pepper
  • 1 cup shredded cheddar cheese
  • 1 cup crushed canned fried onion rings

Simmer chicken breasts in water with bay leaf and celery leaves for 30 minutes. Cool, then cut up and add celery, water chestnuts, onion, almonds, and mushrooms. Mix sour cream, mayonnaise, soup, lemon juice, and salt and pepper. Add to chopped ingredients. Spread into 9 X 13-in. baking dish. Top with cheese and onion rings. Bake at 350° F. for 30 min. This is not sufficient time to make things soft, so it should be crunchy. Good with hot bread and cranberry salad.


Fried Pies

Josephine Steinman, Argyle, Missouri

  • 3 sticks butter, softened
  • 1 cup (8 oz.) sour cream
  • 3 cups flour
  • Any fruit pie filling
  • Powdered sugar for glaze

Mix together butter and sour cream, then add flour. Chill for 1 hour. Roll out and cut into 4-in. rounds. Place 1 Tblsp. pie filling on one half of each round and fold the other half over, pressing edges with a cool, wet fork. Bake in a 375° F. oven until golden brown. Make a glaze of powdered sugar and water and brush top. Place under broiler and watch carefully until glaze crinkles. Makes 16 pies.
