Red and Green Vegetable Medley
- 1 large bunch broccoli,
cleaned and chopped
- 3/4 cup water
- 1/4 cup butter
- 3 Tblsp. lemon juice
- 1/2 tsp. dried basil
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 pint cherry or grape tomatoes, halved

Cook broccoli in water until crisp tender. Rinse
with cold water, drain. Melt butter in skillet. Stir
in broccoli, lemon juice, basil, salt, and pepper. Cook
over high heat 1-2 min. Add tomatoes, toss, and serve.

Tenderloin of Beef in Pastry
- 3-4 lbs. beef tenderloin, trimmed of fat
- 1 tsp. salt, divided
- 1 tsp. ground black pepper, divided
- 1/2 cup butter
- 1 lb. fresh mushrooms, thinly sliced
- 4 green onions, finely chopped
- 1 sheet (from 17 oz. pkg.) frozen
puff pastry, thawed
- 1 egg yolk
- 1 tsp. water

Preheat oven to 400° F. Rub beef with 1/2 tsp.
salt and 1/2 tsp. pepper. Cook beef in roasting pan 25
to 30 min. Cover and chill. Reduce oven temperature
to 350°. In a medium skillet, melt butter over medium-high
heat. Stir in mushrooms, onions, and remaining salt and
pepper until onions are soft. On a lightly floured surface, roll
out pastry to 10 X 13-in. rectangle, or large enough to wrap around
beef. Wisk egg yolk and water. Spread mushroom mixture
evenly over pastry to within 2 in. of edge. Center beef
on pastry. Fold around beef. Seal edges with egg mixture.
Place seam side down on greased baking sheet. Brush
with egg mixture. Bake 30-40 min. If pastry browns too quickly,
cover with aluminum foil. Cool 15 min. before slicing.
Serves 10.

Kentucky Pie
Ruth Ann Carlton, Fruitland Park, Florida
- 1 cup sugar
- 1/2 cup flour
- 2 eggs, slightly beaten
- 1 stick butter (1/4 lb.) melted and
cooled slightly
- 1 tsp. vanilla
- 1 (6 oz.) pkg. chocolate chips
- 1 cup broken pecans
- 1 (9-in.) pie crust

Mix flour and sugar. Add eggs, butter, vanilla,
chocolate chips, and pecans. Pour into pie crust and bake
at 325° F. for approx. 1 hour. Serve warm with whipped
dairy cream or ice cream.
