Chocolate Covered Cherry Pie

In microwave, melt together:
- 1 cup milk chocolate chips
- 1 can sweetened condensed milk
- 1 tsp. almond flavoring
- 2 Tblsp. butter
- Dash salt
|
Add to ingredients at left, 1 can cherry pie filling.
Stir and put into 9-in. baked pie shell. Before
serving, top with sweetened whipped cream. Garnish
with chopped walnuts and sliced maraschino cherries sprinkled
over whipped cream. An easy, attractive, great, and different
pie.

Greek Chicken and Rice
Arveta Case, DeWitt, Arizona
- 1/2 stick butter
- 4 chicken breasts
- 1 tsp. all-purpose Greek seasoning
- 1 bell pepper, chopped
- 1 stalk celery
- 1/2 cup onion, chopped
- 2 garlic cloves, finely minced
- 2 cups uncooked long grain rice
- 1 can cream of chicken soup
- 2 cans water or chicken broth
- 1/2 cup canned tomatoes with green chiles (Rotel)
- 1 tsp. salt
- Dash of pepper

Melt butter in large pan. Add chicken breasts mixed
with Greek seasoning. Brown chicken breasts and simmer
until hot. Place chicken in a 9X13-inch baking dish and
set aside. Using the same pan, saute bell pepper,
celery, onion, and garlic until tender, about 2 minutes. To this
mixture add rice and remaining ingredients. Mix
together and pour evenly over chicken. Bake covered
in a preheated oven at 400° F. for 45 minutes. Garnish
and serve. Serves 4.

Salad
Audrey Chamzuk, Boyle, Alberta
- 1 head cauliflower, cut up small
- 1 head broccoli, cut up small
- 1/2 red onion, sliced fine
- 3 stalks celery, chopped
- 1 small yellow or orange pepper, chopped
- 1 can mushroom stems and pieces, drained
- 1 large handful sunflower seeds
- 1 large handful raisins
- 1 large handful sliced almonds (squeeze in hand to break up)
Dressing:
- 3/4 cup mayonnaise
- 1/2 cup yogurt
- 3/4 Tblsp. vinegar
- 1/4 cup sugar

Cut veggies small, include stems. Mix dressing
well. Put over veggies. Let stand overnight to marinate
before serving.
