Pumpkin Cake
With Caramel Sauce
Linda Gerber, Millbank, Ontario
- 2 cups all-purpose flour
- 2 cups white sugar
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1/2 tsp. salt
- 4 eggs
- 1 can (16 oz.) solid pumpkin
- 1 cup vegetable oil

Combine the first six ingredients. In another bowl,
beat eggs, pumpkin, and oil until smooth. Add
to the dry ingredients. Mix until well blended, about
1 minute. Pour into a greased 13 X 9-in. pan. Bake
at 350° F. for 35-40 minutes.

Caramel Sauce:
- 1-1/2 cups packed brown sugar
- 3 Tblsp. all-purpose flour
- Pinch of salt
- 1-1/4 cups water
- 2 Tblsp. butter
- 1/2 tsp. vanilla extract
|
For the sauce, combine brown sugar, flour, and salt
in a saucepan. Stir in water and butter. Bring
to a boil over medium heat. Boil for 3 minutes, stirring
constantly. Remove from heat, stir in vanilla. Cut
cake in squares and serve with warm sauce. Yields 12
to 15 servings.

Taco Soup
Mrs. James Loehr, Slaughters, Kentucky, and Delpha Sis, Atwood,
Kansas
- 2 lbs. lean ground beef
- 1 diced onion
- Garlic salt to taste
- 1 (28 oz.) can crushed tomatoes
- 1 (16 oz.) can diced tomatoes
- 1 (16 oz.) can pinto beans
- 1 (16 oz.) can kidney beans
- 1 (16 oz.) can corn
- 1 (16 oz.) can hominy, optional
- 1 pkg. taco seasoning mix
- 1 pkg. ranch dressing mix

Brown beef and onion and drain. Mix all ingredients
in a large pan or crockpot. The longer it cooks the better. Serve
with corn chips. Garnish with sour cream, grated cheese,
and black olives. Makes a large amount.

Apple
Muffins
Linda Lindeman, Ainsworth, Nebraska
- 1 egg
- 1/2 cup milk
- 1/2 cup salad oil
- 1 cup grated raw apple
- 1-1/2 cups sifted flour
- 1/2 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
Nut Crunch Topping:
- 1/3 cup brown sugar
- 1/2 cup nuts
- 1/2 tsp. cinnamon

Beat egg slightly with fork. Stir in milk, oil,
and apple. Sift together and add flour, sugar, baking
powder, salt, and cinnamon. Stir just until the flour is
moistened. Batter should be lumpy. Do not over-mix. Fill
greased muffin cups 2/3 full. Sprinkle with topping. Bake
in 375-400° oven for 25 minutes.
