Beef Salad

Wally Jansma, Sioux Falls, South Dakota

Marinade:

  • 1/2 cup virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tsp. sugar
  • 1/2 tsp. salt (or to taste)
  • ground pepper to taste
  • 1 clove garlic, crushed
  • 2 tsp. Dijon mustard

Salad:

  • 15 small mushrooms, sliced
  • 1 1/2 lbs. cooked steak, sliced into thin strips
  • 15 cherry tomatoes, halved
  • 1 (14 oz.) can artichoke hearts, drained and halved
  • 1 head of lettuce, torn, or your favorite bag of mixed salad greens
  • 2 Tblsp. fresh cilantro, minced
  • 1/2 cup crumbled blue cheese

In a covered container, combine marinade ingredients and shake well to combine. In a medium covered bowl, combine mushrooms, beef, tomatoes, and artichokes. Pour marinade over mixture and refrigerate overnight. To serve, arrange beef mixture along with marinade on top of lettuce or other greens. Sprinkle with cilantro and blue cheese. Serves 6.


Reuben Microwave Casserole

Dave Dedrick, Sioux Falls, South Dakota

  • 1 (16 oz.) can sauerkraut, drained
  • 1 (12 oz.) can corned beef, broken into small pieces
  • 2 cups Swiss cheese, shredded
  • 1/2 cup mayonnaise with 1/4 cup
  • Thousand Island dressing
  • 2 medium tomatoes, sliced thin
  • 1/2 cup pumpernickel bread cubes

Saute bread cubes in 2 tablespoons butter. Layer sauerkraut, corned beef, cheese, dressing, tomatoes, bread cubes. Microwave 12-16 minutes on medium high.


Round Steak and Dumplings

Laura Sibson, Howard, South Dakota

  • 2 lbs. beef round steak
  • 1 Tblsp. oil
  • 2 Tblsp. flour
  • Salt and pepper
  • 1 (15 oz.) jar whole Holland-style onions
  • 1 can cream of onion soup

Dumplings:

  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 3/4 cup milk
  • 2 Tblsp. salad oil
  • 1 cup crushed potato chips

Score meat with flour, salt, and pepper. In skillet, brown steak in oil, place in casserole. Place onions on top but reserve liquid. Heat soup and onion liquid in meat skillet. Pour over steak. Bake in oven about 45 minutes at 325° F. Mix flour, salt, baking powder, and milk and roll into balls. Dip dumplings in oil and then chips. Drop on casserole, cover and bake about 20 minutes at 350° F. Serves 8.
