Sweet Potato Biscuits

K. Grace, Weed Heights, Nevada

  • 1/2 cup mashed sweet potatoes
  • 2 tsp. lard or vegetable shortening
  • 1/2 cup buttermilk
  • 1/4 tsp. baking powder
  • 1 cup flour
  • 1/2 tsp. salt
  • 2 tsp. brown sugar

Blend potatoes with soft lard. Mix buttermilk and baking powder. Sift dry ingredients in bowl and combine all ingredients. Roll out to 1/2-in. thick on floured board. Cut with small cutter and bake on greased baking sheet 15 to 20 minutes at 400° F. Uncooked dough may also be used for topping a casserole dish or meat pies.


Busy Day Stew

Margaret Cosgrove, Chateaugay, New York

  • 1-1/4 lbs. stewing meat
  • 4 potatoes
  • 2 carrots
  • 2 cups diced turnips
  • 2 cups diced celery
  • 1 tsp. celery seed
  • 1 pkg. onion soup mix
  • 1 cup chopped onion
  • 1 (14 oz.) can tomatoes
  • 1 cup water
  • Salt and pepper
  • 1/2 cup instant tapioca

Cut meat into small pieces. Dice potatoes and carrots. Put all ingredients together in roaster. Bake in 250° F. oven for 5-6 hours. Delicious and tender. Serves 6.


Frosted Carrot Bars

Mrs. Dale Farbo, Cando, North Dakota

  • 4 eggs, beaten
  • 2 cups sugar
  • 1-1/2 cups of cooking oil or applesauce
  • 2 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3 cups finely ground carrots
  • 1-1/2 cups coconut
  • 1-1/2 cups chopped walnuts
  • 1-1/2 cups ground raisins, optional

Frosting: Mix:

  • 8 oz. cream cheese
  • 1/3 cup softened margarine
  • 2 tsp. vanilla
  • 3 cups powdered sugar

Mix together eggs and sugar. Set aside. Mix oil with flour, baking soda, salt, and cinnamon and add with eggs and sugar. Mix well. Fold in carrots, coconut, nuts and raisins. Bake in 2 greased 9 X 13-in. pans or one big jelly roll pan at 350° F. for 20 to 30 minutes. Frost when cool.
