Recipes on this page feature food products raised on
North American farms. Winning recipes are usually unique variations
on standard dishes. Meat and vegetable recipes are especially needed.
New Jersey Zucchini
Bake
Maria Porreca, Millville, New Jersey
- 2 cups drained shredded zucchini
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, diced (optional)
- 1 onion, diced (optional)
- Salt and pepper to taste
- Italian bread

Mix all ingredients except Italian bread and refrigerate
until chilled and you are ready to bake it. Slice Italian
bread and place in an 8 X 8-in. baking dish. Put
mixture on top. Bake uncovered in a 350° F. oven
for 20 min.

Omaha Broil
Joe Leroy Kicker, Brush Flats, Nebraska
- 2 lb. flank steak (London Broil)
- 4 medium onions, thinly sliced
- 1/2 tsp. salt
- 2 Tblsp. butter
- 4 Tblsp. olive oil
- 2 tsp. lemon juice
- 4 cloves garlic, crushed
- 1 tsp. salt
- 1/2 tsp. pepper

Cut both sides of steaks into diamond pattern 1/8-in.
deep. Cook and stir onions and 1/2 tsp. salt in
butter until onions are tender. Keep warm. Mix remaining
ingredients. Brush half of the mixture on beef. Preheat
grill or oven broiler to 550° F. Broil beef three inches
from heat until brown, about 5-7 min. Turn and brush
with remaining oil mixture and broil 5 min. longer. Cut
beef into thin slices at slanted angle across grain. Serve
with onions. Serves 4-6.

Canadian
No-bake Cheesecake
Mary Pickel, Shediac, New Brunswick
- 1 1/4 cups Graham cracker crumbs
- 1/3 cup butter, melted
- 1/4 cup sugar
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (16 oz.) can ready-to-spread vanilla frosting
- 1 Tblsp. lemon juice
- 1 Tblsp. grated lemon peel
- 1 cup whipped cream, beaten stiff
- 1/2 cup each: sliced almonds, fresh strawberries, and fresh
blueberries

1. Stir together crumbs, butter, and sugar in small bowl.
Press onto bottom and 1/2-in. up on the sides of a 9-in.
spring-form pan or pie plate. Chill.
2. Beat cream cheese, frosting, juice, and peel in a large
mixing bowl at medium speed with electric mixer until well blended.
Fold in whipped cream. Pour over crust. Chill
until firm.
3. Arrange almonds, strawberries, and blueberries on top.
Refrigerate before serving.
