Fresh Strawberry Coffee Cake

C. Cook, Regina, Saskatchewan

Mix together:

  • 1 1/2 cups flour
  • 3 tsp. baking power
  • 1/2 tsp. salt
  • 1/4 cup sugar

Add:

  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup melted butter

Topping:

  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/4 cup chilled butter
  • 1/4 cup shredded coconut
  • Mix together until crumbly.
Mix the wet ingredients into the dry and stir well. Pour the batter into a square 9-inch pan. Top it with 1 1/2 to 2 cups sliced fresh strawberries. Sprinkle with the topping. Bake at 375° F for 30-35 minutes. Delicious.


Veggie Salad

Darlene Kouma, Dwight, Nebraska

  • 1 15 oz. can small peas, drained
  • 1 15 oz. can white corn, drained
  • 1 15 oz. can French style green beans, drained (equal amounts of fresh or frozen vegetables, cooked and drained, may be used)
  • 1 4 oz. jar chopped pimentos
  • 1 green pepper, chopped
  • 1 cup celery, sliced thin
  • 1 cup green onions, chopped

Dressing:

  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1/2 tsp. salt and pepper
Drain liquid from all ingredients, mix dressing and pour over vegetables and toss. Refrigerate.


Baked Ham in a Blanket

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1 tblsp. cloves
  • 1 tblsp. cinnamon
  • 1 tblsp. dry mustard
  • 1/2 tsp. black pepper
  • cider or water
  • 5-6 lb. boneless ham

Make a spice dough by combining the flour, sugar, and seasonings in a large mixing bowl. Add enough cider or water to make a stiff dough. Roll until it is 1/4-in. thick and forms a 10 x 12-in. rectangle. Place the ham, fat side up, in a foil-lined open roasting pan. Cover top and sides of the ham with a blanket of dough. Bake at 350° F. for 3 hours. Cover with foil tent if crust becomes too brown. Remove ham and slice. Serve warm or cooled. The pastry blanket may be too spicy for some and can be removed after baking. Or you may cut cloves back to 1 tsp.

While the ham is cooking, the house fills with a wonderful aroma. That smell always meant celebrations at home. The spice blanket flavors the ham and keeps it moist.
