Cherry Tomato Gratin

- 1/4 cup plain dried bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 tblsp. olive oil
- 1/4 tsp. coarse-ground pepper
- 1 garlic clove, crushed
- 2 pints red and/or yellow cherry tomatoes
- 2 tblsp. chopped fresh parsley

Set oven at 425° F. In
small bowl, combine bread crumbs, Parmesan cheese, olive
oil, pepper, and garlic. Place cherry tomatoes in shallow
casserole pie plate. Top with bread crumb mixture, sprinkle
with parsley. Bake 20 minutes. |
Great Beef Patties

(For each serving)
- butter
- 1 thick, lean ground beef patty
- 1 slice potato, 1-inch thick
- 1 slice onion, 1-inch thick
- 1 slice bacon cut in half
- salt and pepper

On 12-inch-square heavy-duty foil
layer pat of butter, beef patty, potato slice, onion slice,
and both slices of bacon. Salt and pepper to taste. Twist
foil together at the top to enclose package. Place each
package on a cookie sheet. Bake at 350° F. for 1 1/2
hours. Kids and adults love it...a meal in one. For additional
color and flavor, include 1 green pepper ring. Packets can also
be done on the grill over medium-high heat for 45-50 minutes. |
Sundae Dessert

- 1 angel food cake, broken in pieces
- 2 cans (11 oz. each) mandarin orange sections, drained
- 1 can (16-oz.) peaches, drained
- 1 can (16 oz.) cherry pie filling
- 2-3 bananas, sliced
- 1 can (15 oz.) vanilla pudding
- 1 qt. fresh strawberries, sliced
- 1 1/2 cups heavy dairy cream, whipped

Layer in order given and
serve in a glass pedestal bowl. Can also be layered in
6-8 individual sherbet glasses.
