Spinach Bacon SaladKathy Cardinelli, Yerington, Nevada - 4 cups fresh spinach, rinsed and in bite-size pieces
- 3/4 cup sliced green onions
- 1/4 cup thin-sliced radishes
- 10 bacon strips in bite-size pieces
- 1/2 cup cider vinegar
- 2 tsp. sugar
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup sliced fresh mushrooms
- 2 hard-boiled eggs, halved
| In a large bowl, mix spinach, onions, radishes, 1/2 mushrooms. Inskillet, fry bacon until crisp. Add vinegar, sugar, salt,pepper to skillet. Stir until sugar is dissolved. Pour bacon mixtureover salad and toss. Garnish with 1/2 mushrooms and boiled eggs. |
French Onion SandwichSusan Renea Daniel, Hartford, Kentucky - 2 tblsp. butter
- 4 beef cubed steaks, 4 oz. ea., round or sirloin
- 1 medium onion, sliced rings
- 1 cup beef broth
- 1 tblsp. cornstarch
- 2 tsp. Worcestershire sauce
- 1/8 tsp. garlic powder
- 4 one-inch slices French bread toast
- 2 one-oz. slices Swiss cheese, halved
| In a large skillet melt butter. Add steaks and cook over medium-highheat for 2 to 3 minutes on each side until done. Remove from skillet.Reserve drippings. Cook onions in drippings until tender. Combinebroth, cornstarch, Worcestershire sauce, garlic powder, and a dash of pepper.Add to skillet. Cook and stir until bubbly. Cook andstir 2 minutes more. Place steak on bread. Top with cheeseand onion mixture. Serves 2 as a meal or 4 with other foods. |
Ice Cream Pudding DessertAnn Irwin, Grand Island, Nebraska - 2 cups graham cracker crumbs
- 1 cup soda cracker (saltine) crumbs
- 1/4 lb. melted butter
- 2 pkgs. instant pudding, vanilla and chocolate
- 2 cups milk
- 1 qt. vanilla ice cream, softened
- 1 cup heavy cream, whipped
- 3 butterfinger-type candy bars
| Combine cracker crumbs and butter. Mix well. Put 2/3 crumbsin 9 x 13-in. pan. Pat down. Prepare pudding mix. Blendmixes and milk. Stir softened ice cream into pudding until smooth.Pour over crumbs in pan and refrigerate until firm. Spreadwhipped topping over pudding mixture. Crush candy bars and mix withremaining crumbs. Sprinkle over pudding dessert top. Chillovernight. |
