Potato Chip Spinach Loaf

Charlie Wade, Perington, Nevada

  • 1 large can chopped spinach
  • 1 cup grated onion
  • 1 cup chopped celery
  • 1 cup chopped mushrooms
  • 2 cups crushed potato chips
  • 2 eggs, slightly beaten
  • 1 lb. sausage
  • salt and pepper
  • 1 cup grated cheese
Mix all ingredients together and season to taste. Put in a greased loaf pan. Sprinkle with grated cheese and bake at 350° F. for 1 hour.


Chicken Supreme

Carol Nelson Foster, Warsaw, Ohio

  • 4 large boneless skinless chicken breast halves, sliced at the thickest part
  • 6 slices Swiss cheese
  • 1 box seasoned chicken flavored stuffing mix (prepare but don't cook)
  • 1 can, (10 3/4 oz.) condensed cream of mushroom soup, undiluted
  • 1 cup sour cream
  • 1/4 tsp. pepper
Place chicken pieces in a greased 13x9x2-in. baking dish or pan. Lay cheese slices to cover chicken. Scatter stuffing mix over cheese to cover. Combine soup, sour cream, and pepper and spread over stuffing mix. Bake uncovered at 375° F. for 1 hour or until meat is done. Serve with mashed potatoes, salad, and corn. Makes 6 to 8 servings. Be ready to sit down at the table when it comes out of the oven. Reheats well.


Caramel Squares

Marion Iverson, Meota, Saskatchewan

Caramel mixture:

  • 35 caramels
  • 13 cup cream

Mix:

  • 1 cup flour
  • 1 1/4 cups oatmeal
  • 1 cup brown sugar
  • 3/4 cup margarine
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Layers:

  • 1 cup chocolate chips
  • 1/2 cup walnuts
Melt 35 caramels with 1/3 cup cream. Set aside.
Grease a 9x9-in. pan and set it aside.
Put 1/2 of the mix in the pan. Bake until brown at 350° F., about 10-15 minutes. Cover in this order with 1 cup chocolate chips, caramel mixture, and 1/2 cup walnuts. Top with remaining mix and brown, approximately 15 to 20 minutes.
