Bunkhouse Breakfast Fruity Salad

  • 1 can (8 oz.) crushed pineapple
  • 1 can (11 oz.) mandarin oranges
  • 1/2 cup maraschino cherries
  • 1 can (15 oz.) mixed fruit or fruit cocktail, undrained
  • 1 pkg. (3.4 oz) instant coconut cream pudding mix
  • 1 box instant vanilla pudding mix
  • 1 cup heavy cream (whipped)
Mix all ingredients together and refrigerate. May add 2 bananas when ready to serve.


Baked Oatmeal

Carolyn Sutton, Farmington, Illinois

Mix together:

  • 1/2 cup oil
  • 1 cup brown sugar or 1/2 cup maple syrup
  • 2 eggs

Add:

  • 3 cups quick oatmeal
  • 2 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup milk
Pour into buttered 9 x 5 or 8 x 6 pan. Bake at 350° F for 30 min. Serve warm with milk. This can be mixed together the night before to save time.


Cowboy Breakfast Pie

Rose Foster, Chandler, Texas

  • 1 lb. regular sausage
  • 1 lb. hot sausage, cook with regular sausage and drain
  • 1 medium onion
  • 4 or 5 stalks celery
  • 1 can (4.5 oz.) Southwest style (not hot) green chili peppers
  • 8 slices bread toasted or 3 cups flavored croutons
  • 1 can mushroom soup
  • 4 eggs
  • 2 1/2 cups milk
  • 10 oz. cheddar, mozzarella, or Jack cheese

Chop onions and celery fairly fine and add to fried sausage after draining off grease. Fry onions and celery with sausage until onions and celery are about half cooked. Pour sausage, onions, and celery into a large pan or bowl. Add croutons, eggs, peppers, mushroom soup, and milk. Add 1 cup cheese and mix well.

Spoon 1/2 mixture into buttered 9 x 13 dish and spread 1/2 remaining cheese lightly over layer. Spread rest of mixture and cover with remainder of cheese. Bake at 350° F for 35 minutes. Uncover and cook at 300° F for another 30 to 35 minutes. Remove from oven when cheese starts to darken around edges. Best to let cool before serving so it can set up some. Serve with Picante sauce if you like.

You can also make this up ahead of time and freeze, but be sure to thaw completely before baking or refrigerate overnight before cooking. Another nice thing about this recipe: you can add or subtract other items such as olives, jalapenos, spinach, different types of cheeses, flavored croutons, or whatever you really like. Be creative and enjoy.
