Fruit Clouds

Patsy Kerndt, Lansing, Iowa

  • Beat 1 8 oz. pkg. cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 tsp. almond extract
Beat: 1 cup cream. Add to cream cheese mixture. Place wax paper on cookie sheets. Shape mixture into small mounds on sheets. Take back of spoon and make a shell form. Freeze. Take out 5 minutes before serving. Top with fresh fruit or pie filling. Makes 8 servings.


Friendship Soup

Jean Griener, Folby, Minnesota

Layer the following in a quart jar:

  • 1/3 cup beef bouillon
  • 1/4 cup onion flakes
  • 1/2 cup split peas
  • 1/2 cup macaroni rings
  • 1/4 cup barley
  • 1/2 cup lentils
  • 1/3 cup rice (not instant)
  • Finish filling jar with any shape pasta.

When you find yourself in a rush, friendship soup will make an easy meal. Just brown one pound of ground beef or beef stew meat in a kettle. Remove pasta from top of jar and set aside. Add rest of jar's contents to kettle with 14 cups of water. If desired, add 1 cup of diced celery and 1 15 oz. can of diced tomatoes with juice. Let it come to a boil and simmer slowly until done, adding the pasta the last 15 minutes.

This soup mix is nice to have on hand to take to someone just home from the hospital or anyone just not up to cooking. It also makes a lovely gift for a church bazaar or any friend who would enjoy a gift from your kitchen.


Pumpkin Oat Streusel Muffins

Streusel

  • 1/4 cup oats (quick or old fashioned, uncooked)
  • 1 tblsp. firmly packed brown sugar
  • 1 tblsp. butter
  • 1/8 tsp. pumpkin pie spice

Muffins

  • 1 1/2 cups all purpose flour
  • 1 cup oats (quick or old fashioned)
  • 3/4 cup firmly packed brown sugar
  • 1 tblsp. baking powder
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. baking soda
  • 1 cup canned pumpkin
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 egg beaten lightly
Heat oven to 400°F. Line 12 medium muffin cups with paper baking cups or lightly grease bottoms only. For streusel, combine all ingredients; mix well. Set aside. For muffins, combine dry ingredients; mix well. Add combined pumpkin, milk, oil, and egg; mix just until dry ingredients are moistened. Fill muffin cups almost full. Sprinkle streusel evenly over batter, patting gently. Bake 22 to 25 minutes or until golden brown. Let muffins stand a few minutes. Remove from pan. Serve warm. Makes 12.
