Orange Poppy Seed Muffins

Pat Harcey, Saint Charles, Minnesota

  • 1 1/3 cup flour
  • 1 cup sugar
  • 2 tblsp. grated orange rind
  • 1 tblsp. poppy seeds
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1/2 cup sour cream
  • 1/3 cup soft butter, melted
  • 1 egg, slightly beaten
  • 2 tblsp. frozen orange juice concentrate
Blend dry ingredients. Gently stir in sour cream, butter,egg, and orange juice. Don't over mix: batter should be lumpy. Fillmuffin tins 3/4 full and bake at 400F for 18 minutes or until tester insertedin center comes out clean. Makes 12.


Winter Salad

Esther Beachy, Hutchinson, Kansas

  • 1 16 oz. can (or frozen) baby peas, drained (10-12 oz. frozen)
  • 1/2 medium onion, chopped
  • 2 cups celery, chopped
  • 1/2 cup cheddar cheese, cubed
  • 6 slices fried bacon, crumbled

Combine:

  • 1/2 cup mayonnaise
  • 1/2 tsp. salt
  • 2 tsp. vinegar
Stir in rest of ingredients. A delicious and hearty salad.


Chicken Spaghetti Soup

Nellwyn Hess, Gainesville, Texas

A dish to warm the coldest day.

  • 1 pound boneless, skinless chicken breasts, diced or in strips
  • 4-5 chicken bouillon cubes
  • 4 quarts water
Cook until chicken is done.
  • 2 10 oz. cans of cream of chicken soup
  • 2 10 oz. cans of cream of mushroom soup
Stir into above mixture until smooth.
  • 1 10 oz. can chicken broth
  • 1 cup diced carrots
  • 1/2-1 cup diced onion
  • 1/2 cup diced green or
  • 1/2-1 cup diced celery
  • red pepper
I add these to taste.

1 pound thin spaghetti, broken up and cooked as instructed.

2 cups grated processed cheddar cheese spread

Add all ingredients together and cook on low to medium heat. Stiroften. Serve with sourdough bread or your favorite bread.
